Shrimp, Watermelon and Avocado Salad

The incredible summer heat is starting to settle onto Winnipeg, so I’ve been looking for some quick, no-cook recipes that won’t make the house hotter than it already is. (That’s the downside of having a boiler for a furnace: central air is out of the question.)

Shrimp, Watermelon and Avocado Salad

I found this great recipe from Real Simple, and we gave it a whirl. Wow! This was a great salad, even if I forgot to add the cilantro. (Argh. Next time!) The crunchy sweet watermelon contrasted nicely with the creamy avocado, and the shrimp added just the right amount of salt. The avocados I chose were just a touch overripe; next time I’ll choose ones that aren’t quite so soft, as they kinda smooshed up a bit when I tossed the salad. Also, next time I will skip the jalepenos. The onion added enough kick, and the bits of jalepeno all ended up at the bottom of our bowls anyway. We found that one of the mini, seedless round watermelons was just the right size for this.

Thumbs up! And oh so good for a hot summer evening.
